The Secret Ingredient Chocolate Brownies (with a hidden veg đź‘€)

These secret ingredient brownies are rich, chocolatey, fudgy and completely indulgent. Let’s be clear: this is not a “healthy brownie” recipe. It’s a proper brownie. Butter, chocolate, sugar… the works.


But it does contain a secret ingredient that adds a little extra goodness without compromising on taste or texture.

Enter: courgette 🥒

Yes, really.


Before you panic - no, you cannot taste it. Not even slightly. I’ve tested this (extensively) on friends and family, and not one person guessed what was in them. Honestly, the reactions when I reveal it are worth it alone… evil laugh.


Why add courgette?

The courgette melts into the batter as it bakes, adding:

  • Moisture → making the brownies extra fudgy and soft

  • Fibre → something most people struggle to get enough of

  • A little nutritional boost → without changing the flavour

It’s a simple example of how you can add to foods you already love, rather than trying to replace them.


A quick note on fibre

Fibre is one of those nutrients that quietly does a lot of heavy lifting:

  • Supports gut health and digestion

  • Helps keep you full and satisfied

  • Can support blood sugar balance

  • Plays a role in heart health

And yet… most people aren’t getting enough.


The good news? It doesn’t have to mean forcing down foods you don’t enjoy. Sometimes it’s as simple as grating a courgette into your brownies.

Small changes, same foods, better balance ✔️


Ingredients

  • 200g unsalted butter, cubed

  • 200g dark chocolate, broken into pieces

  • 110g plain flour

  • 40g cocoa powder

  • 4 medium eggs

  • 200g golden caster sugar

  • 1 medium–large courgette, grated

  • 50g milk chocolate chips (or more, if you fancy it)


Method


  1. Prep the oven and tin

    Preheat the oven to 180°C (160°C fan). Grease and line a 30 x 20cm baking tin with parchment paper.

    Sift the flour and cocoa powder into a bowl and set aside.


  2. Melt the chocolate and butter

    Gently melt the butter and dark chocolate together in a heatproof bowl over simmering water (making sure the bowl doesn’t touch the water), or microwave in short bursts.

    Stir until smooth, then leave to cool slightly.


  3. Whisk eggs and sugar

    In a large bowl, whisk the eggs and sugar using an electric whisk until thick, pale, and doubled in volume.

    (You should be able to lift the whisk and see a trail that holds for a couple of seconds.)


  4. Bring it all together

    Gently fold the melted chocolate mixture into the eggs.

    Then fold in the flour and cocoa mixture.

    Finally, fold through the grated courgette and chocolate chips.

    Be gentle here - this helps keep the brownies light but still fudgy.


  5. Bake

    Pour the mixture into your prepared tin and smooth the top.

    Bake for 20–25 minutes, until the top is set and shiny but the centre still has a slight wobble.


  6. Cool and slice

    Leave to cool completely in the tin (this is key for that fudgy texture).

    Slice into 16-18 rectangles and enjoy.


Final thoughts

These brownies are the perfect example of balance.

You’re still getting the indulgence, the richness, the proper brownie experience… but with a little extra fibre and goodness quietly tucked inside.

No restriction. No “healthified” disappointment. Just really good brownies with a secret.
